Hockey Puck Chicken

chickenI have never considered myself a fabulous cook.  I am one of those people who doesn’t read directions or recipes.  I like to cook things that don’t require a lot of preparation.  I believe quick and easy and, of course, delicious meals are what I make.  I have previously stated that when it comes to preparing a meal out of necessity it is just plainly no fun, or there is no sense of accomplishment.  I feel pills are in order on those occasions. Let’s face it, you purchase the items, put the food away, prepare the meal, then when everyone is done within ten minutes, you have to clean up the mess. I do love to go to eat and let someone else do the cooking.

Now, I had an awful experience, one of I believe my firsts.  I don’t recall ever really ruining a meal to the point of being unable to eat it.  Well, a couple of weeks ago I had company.  The menu consisted of barbecue chicken, potato soup, a salad, and apple pie.  I parboiled the chicken breasts for about fifteen minutes.  I thought I heard that this was an acceptable amount of time to make sure the chicken did not dry out and would be properly cooked.  Everything else was ready so barbecue sauce was spread on the chicken and it was put on the barbecue to just brown.   When we sat down to eat I noticed that the chicken didn’t look right. It kind of resembled a bunch of hockey pucks.   When you would try to cut them you could not get a knife into the meat.  I was horrified.  My meal was inedible.   The chicken didn’t even look like it was done, when, in fact, it was so overdone that we couldn’t even eat it.  So, now my menu consisted of soup, salad, and thank god I had also purchased an apple pie.  

I have made many meals with chicken as the main ingredient and this is the first time I have had anything close to this experience.

This confirms why cooking is not my favorite pastime.
