Funky Cheese Enchiladas

Every night was a struggle to find something to make for the kids that everyone would eat and enjoy.  Between 2 young boys, my husband, and myself, we all had varying tastes.  For example – the boys would only eat vegetables if they came with ketchup, I don’t eat vegetables at all and one boy wouldn’t eat “sweet” meat.

So, while at the grocery store, I found frozen cheese enchiladas.  Perfect!  “This should work for everyone”, I thought.  Into the cart it went.  In my head, this was going to be a complete hit.  I was in for a bit of a surprise.

I preheated the oven and started making dinner.  As the enchiladas were cooking, there was a bit of a funny smell coming from the oven.  I didn’t think much of it and just assumed that things were fine.  But then I started getting comments from the boys.  “Eeeeww – what is that smell???” they both said.  I told them to stop saying that.  It was dinner and they were going to love it.  

We all sat down to eat and the exclamations of “Eeeewww” continued, but now their dad got involved and told them to knock it off and start to eat.  Both boys hesitantly took a bite and immediately spit it out saying that it tasted gross.  They were both told to GET EATING (in a very harsh tone).  “I’m sure it’s fine…”  their dad said as he also took a bite.

He then proceeded to spit it out and said “‘Chelle – there is something definitely wrong with this dish.  It does not taste good at all!”  I couldn’t believe it.  I guess the horrible smell that it gave off should’ve been my clue that it wasn’t going to taste good either.  

To this day – if I ask my boys what comes to mind when I say “Cheese Enchiladas”, they say “Oh my god – remember those horrible ones you forced us to eat when we were kids?!”  Lesson learned!
