I’m not a big fan of spicy things, so I was hesitant to try this Cajun Cheese soup when I first encountered it, but it quickly became a favorite of mine and now of the entire family!
My first job after college was working at ExecuTrain, an adult computer education company. While working there, I became good friends with Trevor and Danielle. Danielle had a special soup that she claimed was her signature dish and she brought it to every company potluck. It was always one of the first dishes to go. Everyone loved it! Somehow, I convinced Danielle to share the recipe with me.
Fast forward to 1996 and we were staying at a cabin in Door County for Labor Day weekend and I was tasked with making dinner for the family. I decided it was time to pull out the “special recipe”. Cajun Cheese Soup was finally going to make its family debut. The only modification I had to make to dinner time was to also make Creamy Chicken Noodle soup because Grandma Is wouldn’t eat melted cheese anything!
I’ve now made this soup multiple times over the years and I think this summer, I finally perfected it! Here it is:
